Easy Recipes To Cook During Self-Quarantined
What a weird life we live right now. Our world consists of sleeping, working, eating, exercising from home. It is mandatory for us to stay socially distanced during this tough time. However, we still need to eat and have some fun, right? Guess what! You don’t need many different ingredients to create an amazing meal! Here are three easy and delicious recipes for you to try and enjoy.
Korean Egg & Cheese Sandwich
4 Slices White Bread
5 Tbsp Butter
1/2 Cup Cabbage
1/3 Cup Carrots
1/8 Cup Onion
1/2 Tsp Salt
1/4 Tsp Black Pepper
2 Slices American Cheese
2 Tsp Sugar
Spread butter on both sides of the bread slices and keep them aside.
Combine the egg, cabbage, carrots, and onion in a jug/mixing bowl. Add salt and freshly ground black pepper and mix everything well.
Heat a pan over medium heat. Add 1 tbsp butter to the pan then pour in the egg mixture, try to give it a rectangular shape. Cook until the bottom is fully cooked, about 2 to 3 minutes. Then cut the omelet into a half and flip over. Cook the other sides well about 2 to 3 minutes or until fully cooked. Take it off the pan when both sides are fully cooked.
Now toast the buttered bread slices on the same pan (about 1-2 minutes each side or until golden brown)
Once both sides of the bread are toasted and golden brown, place cheese slice and the omelet into one bread slice, then sprinkle 1 tsp sugar on top of the omelet and add ketchup and mustard right on top (you can adjust the amount of the sugar, ketchup, and mustard according to your preference). Cover with another slice of toasted bread. Repeat the same process for the rest of the bread slices.
Slice the sandwich in the middle and serve.
Spicy Garlic Shrimp Pasta
4 tbsp of Olive oil
2 tbsp of Butter
1 small onion (finely chopped)
5 cloves Garlic (minced)
1 tsp of Chili Flakes
200 grams of Spaghetti
300 grams of medium Shrimp (peeled and deveined)
1/2 of Paprika powder
2 tbsp of chopped Parsley
Salt and black pepper to taste
Bring a large pot of salted water to a boil. Cook the noodles to al dente according to package instructions. Drain and set aside
Meanwhile, heat the olive oil and butter in a large, deep skillet over medium-high heat (a big wok works too). Once the oil is hot, add the onion, garlic, chilli flakes. Let cook for 1-2 minutes, then add the shrimp, salt and pepper to taste, and paprika powder. Continue to cook the shrimp for 2-3 minutes.
Reduce the heat, add the chopped parsley and immediately add the drained pasta back to the skillet. Toss to coat the noodles in the sauce.
Brown Sugar Chicken
4 Chicken Thighs
salt and pepper to taste
2 tbsp butter
2 tbsp cooking oil
1 tbsp chopped shallots
3 cloves chopped garlic
3/4 of cup chicken broth
1 cup low sodium soy sauce
2 cups brown sugar
1 tbsp chopped ginger
Preheat the oven to 350 degrees, heat a pot on med to high heat with your butter and cooking oil.
Generously salt and pepper your chicken. Brown the skin of your chicken in the pot for about 2 mins on each side until it’s crisp and golden brown.
Remove the chicken and reduce the heat to medium. Add in the shallots and garlic.
Deglaze the pot with the chicken stock. Scrape down all of the sides to make sure you get all of the delicious seasonings and flavors into the broth.
Add in the soy sauce, brown sugar and ginger. Simmer the sauce for about 5-10 mins.
Add the chicken quarters back into the pot, place the lid on and bake for 45min to an hour.
The chicken will be flavorful and fall off the bone. Enjoy!
